impulsive midnight cooking!

at 10.30pm, i had an impulsive urge to cook and bake at the same time because both me, and the bf, were hungry.
and so i did… sunset wedges with sour cream (midnight snack) and warm honey muffin with strawberry salsa (midnight dessert). i know these two aren’t exactly the healthiest snack to have, especially since it’s past midnight but what the hell! they were both really good. and i’d like to share with you both the recipes just in case you get as impulsive as i am and well, craving for something sinful!


recipe for sunset wedges with sour cream
(hamlyn 1000 recipes for simple family food)

(this recipe serves 6)
ingredients:
3 sweet potatoes, skins on
2 large baking potatoes, skins on
3 tablespoons olive oil
1 teaspoon cajun spice
2 tablespoons chopped parsley
(i replaced cajun spice with cayenne powder, parsley with mixed herbs, added some garlic salt and black pepper for a better kick, and it worked)
dip:
150ml (1/4 pint) greek yogurt
4 tablespoons soured cream
4 tablespoons chopped chives
2 tablespoons freshly grated parmesan cheese
method:
1) cut the sweet potatoes in half, then cut each half into wedges. repeat the same for the baking potatoes.
2) place the potatoes into a large mixing bowl and drizzle over the olive oil, then toss well to coat all the potato wedges.
3) transfer the potatoes to a large baking shweet or oven tray in a single layer.
